USDA Prime Beef

USDA Prime is the upper echelon of USDA Quality Grades for marbling.  Only about 3% of all cattle qualify for the USDA Prime designation.  USDA Quality Grades are determined by an evaluation of intramuscular fat within the ribeye muscle between the 12th and 13th ribs.  Fat equals flavor! And there is not a more richly flavored grade of beef in the United States quality grading system.
